CANNOLI

 

INGREDIENTS FOR 4 PEOPLE:  150 gr of flour, 15 gr of cocoa-powder, 20 gr of butter, 1 egg, 270 gr of sugar, a spoonfull of Marsala wine, a spoon of starch, a glass of milk, 500 gr of fresh butter-milk curd, some candied fruit some little pieces of chocolate, some pistachios, some  little orange-peels, incing sugar, olive oil.

 

                                                               PREPARATION

               Prepare the crust of the cannoli pouring the butter, the sugar, the Marsala wine, the cocoa-powder, the white of an egg into the flour and knead till to obtein an homogeneus pastry; wind it round a cloth and make it rest for about two hours. After which, smoth the pastry with a rolling pin so as to have a not very thin puff-pastry, cut some rings of 12 cm diameter, wind them round some tin tubes bathing the ends with the egg and fry in abundant  oil, as soon as they are golden, let them dry, cool and take them carefully from the tubes.

               Pur through  a sieve the cream af butter -milk curd, blend it with  the sugar, the pistachios , the pieces of chocolate and the starch, melted in the glass of  milk. Fill every crust of cannolo with this cream and decorate with the icing sugar and the orange-peels
