MESSINESE DRIED STOCKFISH

 

Ingredients for  4 people: 500 gr of dried stockfish soaked in water, 300 gr of peeled tomatoes, 20 seeded white olives, 1 spoonful of pine seed and raisins, celery, a small onion, e cloves of garlic, one glass of dry white wine.

 

                                                               PREPARATION

           Fry the onion and the garlic till tey are golden and then,m add  the fish pieces. After some minutes pour the white wine and increase the intensity of the heat.   When the wine has evaporated, add the tomato in chunks; if there  is not enough tomato to cover the contents of the pan, add water.

           Put onn a low heat, cover the pan and cook without stirring for abbout an hour. Then add the olives, the capers, the potatoes cut into lage slices, the celery, the carrot cut into small pieces, the raisins and the pineseeds. Sprinnkle with black pepper, cover and cook on a low heat until the potato pieces are tender.

          Srprinkkle with soe more black pepper, and serve hot.
