NORMA PASTA

 

Ingredients for  4 people: 1 kg of ripe tomato, a handful of basil, 3 aubergines, 1 glass of olive oil, fryging oil, 300 gr of spaghetti, 100 gr of grated salted buttermilk cheese; a small onion, 2 cloves of garlic, salt and pepper

 

                                                               PREPARATION

          Dip the tomatoes in boiling water, peel them and take the seeds away. Fry the onion and the garlic, lightly, add the tomatoes the basil, salt and pepper, and cook for about 20 minutes on a low heat.

          Cut the aubergines in chunks and soak them in water and dalt for about an hour, thrn fry them. Boil the pasta and wen it is not over-cooked drain it.

          Pour the pasta in a soup-tureen and mix with the sauce and the fried aubergines. Garnish with the grated buttermilk cheese and the fresh basil and then serve.
