SPAGHETTI  WITH SEPIA

 

Ingredients for  4 people: 400  spaghetti , 3 cloves of garlic, 25 gr of cuttlefish, 1/2 kg peeled tomatoes, 1/2glass of white winw, 1/2 glass  of olive oil, some parsley, a pinch of chilli and salt

 

                                                               PREPARATION

         Clean the cuttlefishes, taking care of  keeping the bags with the blanck liquid then cut it roughly.

         Afterwards fry lightly the chopped garlic in a saucepan with oil. Add the cuttlefishes and fry util golden. Pour the white wine and make it evaporate. Then add the chopped tomatoes and salt, and simmer on a moderate heat for about 20 minutes.

        When the mixture is almost cooked, sprinkle eith chilli and copped parssley, then pour the sepia in the  sauce. In the meantime, boil the spaghetti and when it is not over-cooked strain it ad stir in the pan wih the sauce. Finally, decorate the spaghetti with some more chopped parsley and serve
