TUNA WITH SWEET-AND-SOUR ONIONS

 

Ingredients for  4 people: 500 gr of fresh tuna cut in 4 thin slices, 3 big onions, e glasses of olive oi, a glass of vinegar, a teaspoonful of sugar or honey, fresh mint, the juice of  lemos

 

                                                               PREPARATION

           Soak the tuna overnight in salt water and emon juice. Dry the slices and fry them in hot olive oil. In anothher frying-pan, cook the thin onion slices until soft in a glass of olive oil and half a glass  of water.

           The onions should not be browned. When the water has evaporated, quickly brown the onions then pour the vinegar and the sugar. When the vinegar is half evaporated, put the tuna slices and taste for salt.

          Coer the slices with the onions by haking the pan, finally sprinkle with finely chopped mint leaves.
